Mix together: 1 c. sorghum flour
1/2 c. teff flour
1/2 c. millet flour
1/2 c. tapioca flour/starch
4 tsp. baking powder
2 tsp. pumpkin pie spice
1 tsp. salt
1/4 c. brown sugar
Slowly add: 1/4 c. oil
1 c. pumpkin
2 c. milk (we always use 1/2 c. lite coconut milk + 1 1/2 c. water)
Mix until well blended. Heat waffle iron or griddle, and spray with cooking spray. Pour batter accordingly.
Great with fresh peaches and powdered sugar!
*Freeze leftovers and save for another day!
